A terroir Made in Bordeaux

For centuries, people have been working the land and the vines in terroirs which have been enhanced and shaped by the passage of time. Consisting of rock and sediment brought down from the Pyrenees by the river during the Quaternary period, the geology here is unique. The topography and climate work together to help ensure that the grapes ripen to their full potential: the influence of the Gulf Stream (a warm ocean current from the Caribbean which flows along the Aquitaine coastline) and Landes forest with its maritime pines forming a natural barrier against the Atlantic wind soften the region’s oceanic climate.

Merlot has since set out to conquer the globe, but it is its native land of Bordeaux which brings out all its roundness and flavour. It draws its strength from the cool clay-limestone soils.

Cabernet Sauvignon on the other hand is ideally suited to the warm sandy and gravelly soils on the left bank of the Garonne.

Merlot and Cabernet Sauvignon make the perfect pairing – a natural fit thanks to the quality of the blend, ancestral expertise which is cleverly orchestrated to produce this unique, modern red wine.

It’s time to open a bottle and enjoy a glass of Cordier Enjoy la Vie. Whether among friends, with your family or as a couple, this wine is the perfect companion to help you stir emotion, create memories and appreciate the here and now. With its blend of Merlot and Cabernet Sauvignon, food and wine pairings are an easy task: express your culinary creativity with lovezly little dishes such as free-range chicken with sautéed potatoes or prime rib in Bordelaise sauce!

Recipe Entrecote

Ingredients (serves 2):

– 1 entrecote for two (from butcher)
– 1/2 bunch curly parsley
– Coarse salt

Preparation time: 10 minutes
Cooking time: 5 minutes

Sprinkle a good pinch of coarse salt over either side of the entrecote and leave to rest on a plate for around fifteen minutes.

While you are waiting, wash and chop the parsley. Take half and spread it over the piece of meat.

Fry for 5 to 10 minutes according to taste.

Sprinkle over the remaining parsley and leave to cool for 3 minutes. Serve with tabbouleh (made using the other half of the bunch of parsley).
